The overall objective of this project is to provide the required knowledge and tools to allow winemakers to manage colloidal stabilization during winemaking process in a better way.
The key aspects of this project will be:
- to develop more appropriate tests to predict wine stability,
- to find common and different parameters of the haze formation mechanism in various wine types,
- to describe the most efficient practice of bentonite conditioning and treatment,
- to develop an innovative white wine clarification tool based on protein-polyphenol binding.
